Lunch Today
Avocado framed egg atop spinach & turkey on toast

Garnished with shaved cheddar cheese, cilantro and green onions.

So, I found This idea on pintrest and had to try it! I wanted it on a sandwich and not just as an egg in an avocado. 
Egg ran over. Make adjustments as needed.
What you do:
Slice your avocado in 1 or more inch slice and remove seed as needed.
Lay in skillet (I used an iron skillet), and place in some oil.
 break your egg in the center of avocado where the large whole is...OF COURSE!
Food may taste good at our house, but it doesn't always work as planned or all pretty. The recipe I found had you leave the peel on the avocado slice. I think if you slice it thick enough you should be able to cook with out the peel.
In the event that your egg runneth over, as mine did, proving that things don't just land where you always want them to.
now you can season with salt n pepper or what ever you use. 
Herbamare is my favorite choice!

Now assemble your favorite sandwich items!
 Mine included:
Ezekiel toast
mayo
1 large spinach leaf from our Local CSA
turkey, but turkey bacon would have tasted WAY BETTER!
then the avocado framed egg with cheddar cheese grated on top
sprinkles of green onion and cilantro (also CSA)

I sauteed some jalapenos to have on the side and a yummy pickle. I firmly feel there is no flavor to my sandwich if there is no pickle or jalapeno to Zaz it up a bit! If you agree and have neither, add some hot sauce to it!
